Bulletproof Matcha Latte

This has become my healthy morning boost since I gave up coffee. Matcha gives me sustained energy all along the day, it’s not as acidic as coffee, and is loaded with antioxidants.

Matcha Chai Latte (a strong green tea will work just as nice if you don’t have matcha)

1 teaspoon of organic matcha powder
3/4 cup near boiling water

Mix the powder and the water. You can stop here and just enjoy your matcha tea.

Or, take it to the next level.
Pour the tea mixture in the blender and add:

1/2 cup sweetened nut milk (i use dates to make it super creamy)
1/2 teaspoon vanilla seeds
1 tablespoon of chai spice
1 teaspoon ground turmeric
1 tablespoon of coconut oil

Blend. Adjust for sweetness and spice. I make my own chai spice, but you can just add cinnamon, cardamom, clove and black peppercorns.

I added reishi mushroom powder to mine, for a medicinal boost

IMG_6202Upon waking:

1 cup of warm water and squeeze of 1 lemon
wait 30 minutes then….

Green Juice
1 cucumber
1/2 to 1 medium green apple (as little sugar as possible)
2 celery stalks
1 cup of kale, collard greens or spinach leaves
1/2 bunch parsley
1 inch ginger
squeeze of 1/2 lemon

Juice all of the above in a juicer, or blend with just a bit of water, then strain through a nut milk bag, or a fine strainer.
Drink immediately.

Breakfast one hour later:

Mango Ginger & Mint Milkshake
1 frozen banana (freeze bananas by peeling really ripe bananas, chopping them , then placing them in a tuperware in the freezer)
1/2 mango
1 1/2 cups almond milk
1 cup chopped kale/romaine/spinach/collard greens or any other dark green
1/2 cup chopped mint leaves
1 tablespoon grated fresh ginger
1 tablespoon coconut oil
1 tablespoon chia seeds
1 teaspoon vanilla extract
Dash of salt
Squeeze of lime

Blend all in a high speed blender until smooth. You can add some ice to make it creamier.

For lunch…

Zucchini Pasta with Basil & Parsley Walnut Pesto
Pesto:
2 cups basil, stems removed
1 cup parsley, stems removed
1/4 cup olive oil or 1/4 cup flax/hemp oil and 1/4 olive oil
1/2 cup walnuts
1/2 cup pumpkin seeds
1 1/2 tablespoons lemon juice
1 clove of garlic
1 tablespoon nutritional yeast
1 teaspoon miso
1/2 teaspoon salt
Pepper

Pulse all ingredients in a food processor and blend until well combined but still slightly chunky.

Pasta:
2 zucchinis (1 per person)
Transform the zucchini into noodles using a vegetable peeler or spiral slicer. Toss the zucchini noodles with enough pesto sauce to coat well and serve immediately. Serve with extra pesto sauce on the side.

Now is when your body can really rest up, so we will drink more liquid, and give our digestive system a break…

For dinner…

Carrot Ginger Soup
3 cups carrot juice
1/2 haas avocado (or 1 cup local avocado)
3 tablespoons lemon juice
2 dates
1 T grated ginger
1 teaspoon mild curry
1 t dried coriander powder
Cayenne pinch
1/4 t salt

Fresh coriander leaves for garnish
Drizzle of olive oil

Blend all ingredients on high speed blender until smooth

Ideally, we finish eating/drinking any food or soups by 7 pm, and drink lots of water and herbal teas all day. My favorite teas to support a detox day are nettle (very rich in iron), dandelion, chamomile, and/or a detox tea of your choice.
